Given latency issues (in Australia) and my computer not being the best, I find the CM build a bit laggy at times for me, so have never switched to it.
What other builds do people use, or has Wiz really just been boiled down to a CM / freeze class?

Unfortunately, for uber boss runs, Wiz is basically the dude that should keep the bosses frozen. If there are more efficient uses for wizards during ubers, I'd like to see them but right now they appear to be just the freeze guy/gal. I've been trying a more artillary related build with meteors and blizzard (hydra's not useful at the moment as they reflect damage but don't proc lifesteal/life on hit; change coming with patch so they should be viable soon). I'll let everyone here know if it actually works out.

Seems pretty much for uber runs CM Wiz is the best. I've backed off doing ubers using my wiz and just use my monk to tank the ubers for everyone else in the party.

The Archon scenario does indeed leave you as the res and decoy player while it is on cool down. A friend of mine uses a disintegrate build so even without Archon he just disintegrates the ubers. Still the fact that most wiz spells leave them standing still makes them kind of tough to diversify in terms of builds for things like fighting ubers.
